Delicious, Moist, and Perfectly Textured Banana Nut Bread Made With Kefir!



Have you ever had the "BEST Banana Nut Bread"? Well here it is! I have made this treasured recipe many times with my home-brewed probiotic kefir! This banana nut bread is so delectable and I always get praises for it; I like to make it in small loaves and give it to friends and family wrapped up in cello polypropylene bags printed with elegant ivory lace that I sell in my etsy shop:

Blissful Banana Nut Bread

1/2 cup butter
3/4 cup sugar
1 large egg
1 1/2 cups flour
1 teaspoon baking soda
1 1/4 cup mashed ripe bananas
1/4 cup kefir
*You can add chopped walnuts or pecans if desired (I do!)

Preheat oven to 350°F. In a medium sized bowl, cream the butter and sugar together until light and creamy. Beat in egg and set aside. In a large bowl, combine the flour, baking soda, bananas, and kefir; stirring just enough to mix. Add the first mixture to the banana mixture; stirring enough to combine well. Turn into greased 9x5 inch loaf pan or mini loaf pans. Bake for 50-60 minutes at 350°F. Cool in big loaf pan or mini loaf pans for 10 minutes. Remove and finish cooling on a rack. Enjoy!
